Why does prepared food contain more energy and nutrients than raw food?
Prepared chicken contains more proteins and energy (kJ/kcal) than raw chicken. Why?
When preparing food, the loss of water results in an increased concentration of other nutrients.
The amount of energy-yielding nutrients, such as protein, fat, carbohydrate and dietary fibre will increase per 100 g of food, and contribute with more energy.
