Why does prepared food contain more energy and nutrients than raw food?

Prepared chicken contains more proteins and energy (kJ/kcal) than raw chicken. Why?

When preparing food, the loss of water results in an increased concentration of other nutrients.

The amount of energy-yielding nutrients, such as protein, fat, carbohydrate and dietary fibre will increase per 100 g of food, and contribute with more energy.

Factors for weight change used in calculation of recipes in the Food Composition table are presented on page 54 in the booklet "Weight, measures and portion sizes of foods".
